San Antonio Chili
10 Servings
3 lb meat (chili, Coarsely Ground meat)
6 T chili powder
1 T oregano
1 T cumin
1 T salt
1/2 t cayenne pepper
2 large cloves garlic, minced
1 t tabasco
1 1/2 qt water
1/4 c white corn meal
In Dutch oven, brown ground meat; drain.
Add seasoning and water; heat to boil. Reduce heat, cover and simmer for 1 hour and 30 minutes. Skim off fat.
Stir in corn meal and simmer uncovered for 30 minutes.
Stir occasionally.
