Honey Peach Butter
5 lb peaches, peeled & chopped
1/4 c water
2 1/4 c sugar
3/4 c honey
Cook peaches in water until soft. Press through a food mill. Measure 6 cups pulp; return to pan.
Add sugar and honey. Cook stirring often until mixture thickens, about 1 1/4 hours. Pour in hot jars, 1/4" head space. Adjust caps. Process in boiling water bath 20 minutes.
