Gumdrop Cookies
1 c shortening
1 c brown sugar
1 c sugar
2 eggs
1 t vanilla extract
2 c flour
1/2 t salt
1 t baking soda
1 t baking powder
2 c rolled oats
1 c gumdrops, cut into small
pieces
1 c coconut, flakes
Preheat oven to 350 degrees
Cream shortening & sugars together.
Add eggs & vanilla & beat well. Sift together flour, salt, baking soda & baking powder.
Stir into creamed mixture.
Stir in rolled oats. Fold in gumdrops & coconut flakes. Drop by teaspoonfuls, 2 inches apart, on an ungreased cookie sheet. Bake for about 12 minutes or until cookies are browned. Cool on wire racks.
