Four Cheeses Baking Powder Biscuits

2 c flour
1 T baking powder
1/4 t salt
1/4 c butter, chilled
1/4 c sharp cheddar cheese shredded
1/4 c white cheddar, shredded
1/4 c monterey jack cheese shredded
1/4 c american cheese, shredded
2/3 c milk
In a medium bowl, stir together flour, baking powder and salt. Cut in butter until mixture resembles coarse crumbs.
Stir in cheeses.
Add milk, stirring just until moistened. Turn out onto a lightly floured surface. Quickly knead dough by gently folding and pressing dough 10 to 12 strokes or until nearly smooth. Pat or lightly roll dough to 1.2 inch thickness.
Cut dough with a floured 2 1/2 inch biscuit cutter.
Place biscuits 1 inch apart on an ungreased baking sheet. Bake in a 450 degree F oven for 10 to 12 minutes or until bottoms are golden brown. Serve warm. Makes 10 to 12 biscuits.
