2 1/3 c flour, sifted
1/2 c sugar
1/4 t salt
1 c butter (2 sticks)
3/4 c unblanched almonds, grated
1 1/2 t vanilla extract
1/2 c raspberry jelly (or jam)
granulated sugar for coating cookies

Into bowl, sift together flour, sugar, and salt. Cut in butter with pastry blender until mixture resembles coarse meal. Blend in almonds and vanilla; work mixture with fingers until a ball of dough is formed.

Preheat oven to 350. Roll out dough on lightly floured surface; cut with small cookie cutter into desired shape, such as flowers.
Place on greased cookie sheets.

Bake in preheated oven 8 to 10 minutes. While hot, spread bottom half of the cookies with jelly; place another cookie on top to form a sandwich. Coat cookies with granulated sugar.
