Divinity Surprise Cookies

3 egg whites, room temperature
1 c sugar
1 t vanilla extract
12 oz chocolate chips

You will need a cookie sheet lined with baking parchment.

Preheat oven to 300 degrees.

Beat egg whites until stiff. Continue beating & gradually add sugar. Fold in vanilla & chocolate chips. Drop by teaspoonfuls, 2 inches apart, onto cookie sheet lined with baking parchment. Bake for 30 minutes. Let cool on parchment.
