Crisco White Cake

2 1/4 c cake flour, sifted
1 2/3 c sugar
4 1/2 t baking powder
1 c milk
1 t salt
2/3 c white shortening (crisco)
5 egg whites, unbeaten
1 1/2 t flavoring (or extract)
1/3 c milk

Mix cake flour, sugar, baking powder, milk, salt, shortening.
Mix thoroughly 300 strokes by hand or 2 minutes on medium speed with an electric mixer. Scrape bowl frequently during mixing.

Add the egg whites, flavoring and 1/3 cup milk and mix 300 strokes by hand or 2 minutes with an electric mixer.
Mix vigorously.

Pour the batter into two 9" layer pans, which have been lined with plain paper or greased & floured.

Bake at 350 degrees baking time about 35 minutes.
