Banana "Mars" Soup
1 lg beef bone, or 2 pounds stewing
beef
14 green bananas
milk from 3 coconuts
1 lb tomatoes
2 escallion
1 ea garlic
4 potatoes
salt, pepper, thyme, to taste
Put beef or bone in 4 quarts water and cook for 4 hours to make stock. Blanch bananas in cold water brought to boil. Dice potatoes, tomatoes, chop escallion and garlic; add to beef stock. Reduce stock by half and add diced bananas.
Add salt, papper and thyme and thick coconut milk. Cook for 5 minutes longer, Serve hot.
